Where iOS asks for your permission first, you can change your answer at any time in Settings › Privacy & Security. Nothing the app reads or writes there is sent to the developer.
You can delete your data from inside the app: Settings › Erase All Workout Data.
If this policy changes, the new version will be posted on this page with a new effective date.
